Feel-Good Chicken Soup
- 2 chicken breast medium, boiled and shredded, save water
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 medium carrots diced
- 1 yellow onion diced
- 3 medium potatoes diced
- 3 stalks celery diced
- 1 cup frozen peas
- 1/2 cup chives for garnish
- 1/2 cup cilantro chopped
- 4 hardboiled eggs chopped
- 200 grams noodles Tagliatelle
- salt
- In a sauce-pan saute: carrots, onion, cilantro and celery in the oil and butter, for 10 minutes on medium heat.
- Add the potatoes and saute for 5 minutes add the reserved chicken stock and shredded chicken, season with salt and pepper, let is simmer until carrots tender and potatoes cooked.
- Turn the heat off, add peas, eggs, and noodles, cover for 15 minutes and then serve. Garnish with chopped chives.
