Spanish Style Chicken And Sausage
- 1 Tbsp. olive oil
- 1/2 lb. sweet or spicy Italian sausage or chorizo, cut into 1/2-inch slices
- 1 whole chicken breast, boned, skinned and cut into 1/2-inch cubes
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 2 chicken bouillon cubes
- 1 2/3 c. hot water
- 1/2 tsp. salt
- 1/2 tsp. ground thyme
- 1/4 tsp. garlic powder
- 1 c. frozen green peas
- 1 1/2 c. instant rice
- 2 medium tomatoes, diced
- Heat oil in large skillet; add sausage and brown well, about 5 minutes.
- Drain fat.
- Add chicken, onion and green pepper and cook 5 minutes longer.
- Meanwhile, dissolve bouillon cubes in water; stir in salt, thyme and garlic powder.
- Pour into skillet.
- Add peas and bring to a boil.
- Cover, reduce heat and simmer 5 minutes.
- Stir in rice and tomatoes.
- Cover; remove from heat and let stand 5 minutes.
- Makes 6 servings.
