Salmon Caesar Salad
- 6 slices french bread
- 1 tablespoon olive oil
- 1 ounce Parmesan cheese grated
- 1 tablespoon baby capers
- dressing
- 1/2 cup olive oil
- 4 anchovy fillets
- 1 tablespoon red wine vinegar
- 1/2 lemon juiced
- 1 clove garlic chopped
- 2 teaspoons worcestershire sauce
- 1/4 teaspoon Tabasco Sauce
- 1/3 pound romaine lettuce leaves baby
- 1/4 pound smoked salmon slices
- 1/2 avocado sliced
- 4 spring onions sliced
- 1 large egg soft-boiled and roughly chopped
- cracked black pepper to serve
- Preheat oven to 350u0b0F. For the croutons, line a baking sheet with parchment paper. Brush both sides of the bread with the 1/2 tbsp olive oil, arrange on the baking sheet and sprinkle with the cheese. Bake for 5 mins, then cool.
- Heat 1/2 tbsp oil in a small frying pan and fry capers until they burst.
- For the dressing, place all ingredients in a food processor and process until well combined.
- Add the lettuce, smoked salmon, avocado and spring onion to a serving bowl and toss with the dressing. Top with the capers, croutons, egg and pepper to serve.
