Caribbean Chicken Curry

  1. Peel the carrot, cut into a fine dice. Core and seed the bell pepper, cut into a fine dice. Core the apples, and chop into 1/2 inch cubes. Put in water to prevent browning.
  2. Cube chicken breasts into 1 inch cubes. Season cubes with salt, pepper, and allspice. Heat oil in pan, add chicken. Cook through. Remove chicken and reserve.
  3. Add bell pepper, carrots, an raisins to still hot pan, soften. Add apples and grapes, chicken cubes. Pour your favorite yellow curry sauce over everything.
  4. Because the apples will release liquid, if the sauce is too thin, cook uncovered on high for a few minutes.
  5. Serve over rice.
