Coconut Lime Pound Cake
- 1/2 cup vegan butter
- 1/4 cup coconut oil
- 1 cup coconut sugar
- 2 bananas large, broken into small chunks
- 1 1/4 cups unsweetened shredded coconut
- 2 tablespoons lime zest
- 1 lime
- 3 teaspoons baking powder
- 3/4 cup non dairy milk
- 3 cups all purpose flour
- confectioners' sugar for dusting
- Preheat oven to 325F
- In a stand mixer, beat butter, oil, and coconut sugar until smooth and creamy.
- Add chunks of banana, coconut and lime zest. Continue to beat on low.
- Add lime juice, baking powder, and nut milk of choice. Continue to beat on low.
- Slowly add flour, one cup at a time until a smooth thick batter has formed.
- Prepare a bundt pan by greasing with non-stick spray or coconut oil. Pour batter into pan and smooth the top with a spatula.
- Place in the oven and bake for 50 minutes or until a toothpick comes out clean.
- Let cool in pan for a few minutes and then transfer to a wire rack to continue cooling.
- Dust top of pound cake with confectioners sugar if desired.
