Cajun Pasta With Asparagus And Bell Peppers
- 1 cup pasta
- 1/3 cup heavy cream or cauliflower puree
- 1 tablespoon olive oil or grapeseed oil
- 1 cup asparagus or other vegetables
- 1/3 pepper chopped decorative, red, yellow roasted bell peppers or other choices
- 2 fresh basil leaves or 1 or 2 tsp dried basil
- 1 teaspoon parsley
- 1 cup pasta water REMEMBER TO SAVE IT!!!!!!!!!!!!!!!
- 1 teaspoon salt or tbsp, PUT SALT in water when cooking pasta!!!!!!!!!!!!!!
- 2 teaspoons cajun spice
- 1 teaspoon coarse salt add little by little to taste
- Start heat water for cooking paste (PUT SALT IN THE WATER!!!!).
- Put all needed items on the working station.nash the asparaguses and peppers.
- Snap off the wood base of asparagus, and cut peppers into medium size pieces.
- Put 1 tbsp oil in a pan (non-stick pan is preferred and should large enough to hold everything), and cooking the vegetables (not completely). Then discard the oil. No salt are needed in this step.
- Skip this step, you are using asparagus and bell pepper. Different vegetables cook in different time (be carefully not to OVERCOOK vegetables).
- Save some pasta water, and then drain the pasta.
- Put cajun spice in the pan for 30 seconds. Then pour the heavy cream in and stir for a few seconds.
- Put the pasta in and stir gently. Test if the vegetables are cooked. When they are not cooked completely, wait until they are fully cooked (add pasta water if the sauce seems to dry out and remember there is salt in the pasta water). If the pasta is not salty enough, add salt little by little to taste.
- Mix in the parsley and put into a serving bowl.nhop some fresh basil or a lot fresh basil (I love basil) to garnish.
