Blue Cheese And Pepper Stuffed Mushrooms

  1. Preheat broiler. Heat oil in a frying pan, add chopped mushrooms, onion and pepper. Cook for 3-5 mins until onion has started to soften. Add tomatoes and parsley. Cook, stirring, for 1 min. Add blue cheese and season to taste. Distribute mixture between mushroom caps and sprinkle with Parmesan cheese. Wrap each mushroom in foil and broil for 10 mins.
