Blue Cheese And Pepper Stuffed Mushrooms
- 1 tablespoon olive oil
- 8 portobello mushrooms or large white, stems finely chopped, caps left whole
- 1 onion peeled and finely chopped
- 1 yellow bell pepper deseeded and finely chopped
- 2 tomatoes deseeded and finely chopped
- 1/2 cup fresh parsley finely chopped
- 1/4 pound blue cheese crumbled
- 2 tablespoons Parmesan cheese grated
- Preheat broiler. Heat oil in a frying pan, add chopped mushrooms, onion and pepper. Cook for 3-5 mins until onion has started to soften. Add tomatoes and parsley. Cook, stirring, for 1 min. Add blue cheese and season to taste. Distribute mixture between mushroom caps and sprinkle with Parmesan cheese. Wrap each mushroom in foil and broil for 10 mins.
