Pumpkin Raisin Pancakes
- 1/4 cup pumpkin organic
- 1 egg white
- 1/2 cup unsweetened almond milk you could use 1/4 cup if you want your pancakes bigger
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1 pinch salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons raisins heaping of organic
- 1/2 teaspoon pumpkin pie spice
- Stir the flour, baking soda, salt, stevia, cinnamon, nutmeg, and pumpkin pie spice together in a small bowl.
- In a separate bowl, whisk together the egg white, pumpkin, and unsweetened almond milk.
- Stir into the dry ingredients and stir just enough to moisten everything
- Heat a skillet over medium high heat and spray with nonstick spray.
- Pour the batter into the preheated pan and drop raisins on top immediately. Cook until bubbles appear on the top, about 3 minutes. Flip and cook an additional minute or two. Repeat with remaining batter.
