Coorg Pandi Curry

  1. Dry roast all the masala powder ingredients one by one till getting dork brown on slow flame (don't burn). allow to cool then make a powder and keep it separately.
  2. Clean and cut the pork into small pieces,then wash and drain the water completely.
  3. Marinate the pork with turmeric,chilli powder salt and all crushed vegetables into the thick bottomed vessel up to 20 mins.
  4. Cook the marinated pork with its own fat till up to 2 and 1/2 on hours on slow. (stir the meat occasionally for avoiding from the burning or sticking.)
  5. Once meat getting tender, now add Dry masala powder and Kachampuli then mix well. leave to cook 20 mins.
  6. Serve hot with kadambittu,Nupputtu, and Akki roti or ghee rice.
