Coorg Pandi Curry
- For Masala powder
- Coriander seeds -100 gms
- Pepper corn -25gms
- Cumin seeds -10gms
- Fenugreek -5gms
- Mustard seeds -10gms
- Cinnamon stick -2nos
- Cloves -6nos
- Pork -1kg
- Crushed Onion - 200gms
- Crushed ginger -20gms
- Crushed garlic -25gms
- Crushed green chilly -5nos
- Salt -to taste
- Turmeric powder -1 tsp
- Chilli powder -2 tbsp
- Kachampuli - 2tbsp
- Curry leaves - 3
- Pork Masala Powder -50gms (or)3 tbsp
- Dry roast all the masala powder ingredients one by one till getting dork brown on slow flame (don't burn). allow to cool then make a powder and keep it separately.
- Clean and cut the pork into small pieces,then wash and drain the water completely.
- Marinate the pork with turmeric,chilli powder salt and all crushed vegetables into the thick bottomed vessel up to 20 mins.
- Cook the marinated pork with its own fat till up to 2 and 1/2 on hours on slow. (stir the meat occasionally for avoiding from the burning or sticking.)
- Once meat getting tender, now add Dry masala powder and Kachampuli then mix well. leave to cook 20 mins.
- Serve hot with kadambittu,Nupputtu, and Akki roti or ghee rice.
