Potato Waffles And Smoked Salmon
- 1 1/4 cups flour
- 3/4 pound potatoes
- 1 teaspoon baking powder
- 9/16 tablespoon salt
- 2 3/8 tablespoons sugar
- 2/3 cup butter melted
- 5 eggs
- chives Chopped
- 5 2/3 tablespoons white cheddar grated, or comte
- 3 3/8 cups milk
- smoked salmon
- cream
- lemon
- Cook potatoes in boiling water and puree them without adding milk. Let cool.
- In a bowl, combine flour, baking powder, salt, sugar, eggs, potato puree, chives, grated cheese, and melted butter.
- Gradually add the milk, stirring constantly.
- Let the dough rest for 2 hours.
- Heat a waffle iron and cook waffles until well browned.
- To serve, place a small piece of smoked salmon on each waffle, garnish with cream, pepper and lemon zest.
