Cowboy Supper
- 4 slices bacon
- 2 onions chopped
- 2 tablespoons tomato paste
- 13 1/2 ounces butter beans drained
- cayenne pepper to taste
- 1 roll day old bread soaked water, excess water squeezed out
- 1 1/2 pounds ground beef
- 13 1/2 ounces sweet corn
- 1 egg
- 1 1/4 pounds thick-cut french fries frozen
- 3 leaves
- 8 sprigs fresh parsley
- 1 pinch sweet paprika
- Fry bacon for 4 mins, until crispy. Remove bacon and saute 1 onion in bacon fat. Add tomato paste and cook for 1 min, stirring. Add beans and 2/3 cup water. Bring to a boil and season. Add cayenne, to taste. Keep warm.
- Meanwhile, combine bread, ground beef, corn, remaining onion and egg. Season. Shape into 4 patties. Lightly grease a grill pan and grill patties for about 12 mins, or until cooked to your liking.
- Cook French fries according to package instructions. Remove from heat and season. Toss with parsley and paprika. Serve with burgers and bean mixture.
