Summer Fruit Cobbler
- 1 5/8 cups raspberries
- 1 1/2 cups blueberries
- 1 3/8 cups strawberries
- 3 peaches yellow
- 1 7/16 cups cherries
- 2 tablespoons cane sugar
- 7 tablespoons unsalted butter cold
- 1 1/4 cups wheat flour
- 1 teaspoon vanilla extract powder
- 1 3/4 ounces sugar cane
- 1 teaspoon baking powder
- 5 1/16 tablespoons cream 35% minimum
- 5/8 cup grated coconut
- Mix raspberries, blueberries, strawberries, and peaches together. Pit the cherries, and add to fruit mixture.
- Spread the mixed fruits in a baking dish. Sprinkle with 2 tablespoons of sugar.
- Preheat oven to 180 degrees Celsius.
- In a bowl, cut the butter into small cubes, add the flour, vanilla, sugar, and baking powder.
- Mix well with a spatula.
- Gradually stir in the cream, then the coconut.
- Spoon dough on top of the fruit mixture, without covering the mixture completely (leaving a space between each spoonful).
- Let cool before serving.
- You can try cobbler with rhubarb, apricots, or apples, together with various berries
- Serve with either whipped cream, or vanilla ice cream.
