Marinated Chicken Kabobs
- 4 skinless boneless chicken breast halves
- 2 zucchini smalls, cut in 1/2" slices
- 1 inch red bell pepper cut 1" squares
- 1/2 cup red wine vinegar
- 1/2 cup tomato juice
- 2 tablespoons vegetable oil
- 2 tablespoons brown sugar
- 1 tablespoon chopped onion
- 2 cloves garlic minced
- 1/2 teaspoon dried oregano crushed
- 1/2 teaspoon pepper
- Lightly flatten chicken breasts; cut each breast lengthwise into 3 strips.
- In a large bowl, combine chicken, zucchini and red pepper.
- For marinade, in jar, combine remaining ingredients; cover and shake vigorously.
- Pour marinade over chicken and vegetables.
- Cover; marinate in refrigerator about 1 hour.
- Drain chicken and vegetables, reserving marinade.
- Broil, 3 to 5 inches from heat source, 8 to 10 minutes or until chicken is cooked, turning and brushing with marinade occasionally.
