Apricot And Turkey Tagine
- 2 tablespoons butter
- 1 tablespoon oil
- 1 1/2 pounds turkey cubed, bones discarded
- 1/3 cup all purpose flour
- 1 onion chopped
- 2 cloves garlic crushed
- 2 teaspoons fresh root ginger finely grated
- 1 teaspoon ground cinnamon
- 1 teaspoon ground coriander
- 1 pinch saffron
- 1 cup chicken stock
- 2 tomatoes chopped
- 3 ounces dried apricots about 3/4 cup
- 1 tablespoon honey
- couscous to serve
- plain yogurt to serve
- pistachios Chopped, to serve
- cilantro leaves to serve
- Heat butter and half the oil in a large saucepan on high. Toss turkey in flour, shaking off excess. Brown turkey in 2 batches, for 2-3 mins each. Season with salt and black pepper. Set aside.
- Heat remaining oil in same pan on high. Saute onion, garlic and ginger for 3-4 mins until tender. Add spices and cook for 1 min.
- Return turkey to pan. Blend in stock, tomatoes, apricots and honey. Bring to a boil. Reduce heat and simmer, covered, for 20 mins. Remove lid and simmer for 10-15 mins until thickened slightly.
- Serve tagine on a bed of couscous. Drizzle with yogurt and sprinkle with pistachios and coriander.
