Acorn Squash With Fruit

  1. Cut squash in half lengthwise and remove seeds.
  2. Place in 12-inch plate, hollow side down and stems to the outside.
  3. Cover with plastic and microwave on High for 10 minutes, turning plate after 5 minutes.
  4. Test to see if done.
  5. Do not pierce skin.
  6. Let stand while preparing fruit.
  7. Combine brown sugar, cinnamon, cornstarch and the 1/4 teaspoon salt.
  8. Blend well.
  9. Stir in fruit. Microwave, uncovered, on High for 4 minutes, stirring after 2 minutes.
  10. Stir in butter.
  11. Lightly salt each squash and fill with fruit.
  12. Serves 4.
