Acorn Squash With Fruit
- 2 acorn squash
- 1/4 c. packed brown sugar
- 3/4 tsp. ground cinnamon
- 1 tsp. cornstarch
- 1/4 tsp. salt
- 1 c. blueberries (if frozen, thaw and drain well)
- 3/4 c. finely diced apple
- 1 Tbsp. butter
- salt
- Cut squash in half lengthwise and remove seeds.
- Place in 12-inch plate, hollow side down and stems to the outside.
- Cover with plastic and microwave on High for 10 minutes, turning plate after 5 minutes.
- Test to see if done.
- Do not pierce skin.
- Let stand while preparing fruit.
- Combine brown sugar, cinnamon, cornstarch and the 1/4 teaspoon salt.
- Blend well.
- Stir in fruit. Microwave, uncovered, on High for 4 minutes, stirring after 2 minutes.
- Stir in butter.
- Lightly salt each squash and fill with fruit.
- Serves 4.
