Texas Cornbread
- 1 cup yellow cornmeal or semolina
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 1 cup buttermilk
- 1 9/16 cups creamed corn can of, or 300ml crispy corn
- 2 large eggs
- 3 1/3 tablespoons bacon drippings or butter
- 1 teaspoon vegetable oil
- 1 pound minced beef
- 2 onions peeled and chopped
- 1 3/4 cups hard cheese grated, I used old Dutch cheese
- 5 3/8 tablespoons jalapeno peppers chopped
- Preheat oven to 180C.
- In a large bowl, mix cornmeal with bicarb soda and salt. Add buttermilk, creamed corn and eggs. Then beat till batter's smooth and set aside.
- Put bacon drippings or butter into a heavy pan or baking dish and place in oven to heat up.
- To make filling, heat oil in a frying pan and lightly brown minced beef and chopped onions.
- Pour half batter into hot dish and sprinkle on browned beef and onion, cheese (I put some aside to sprinkle on top of top batter) and jalapenos (add more if you really like hot food).
- Then top with remaining batter. (I put some cheese on top of batter as well coz we love cheesy crispy toppings.)
- Bake for 45-50 mins.
