Sesame Chicken & Asparagus Pasta
- 16 ounces linguine
- 3 cloves minced garlic
- 1 tablespoon red wine vinegar
- 1 tablespoon brown sugar
- 6 tablespoons chunky peanut butter
- 1/4 cup soy sauce
- 6 tablespoons sesame oil
- 3 tablespoons hot chili oil
- 2 chicken breast halves boneless cooked
- 5 tablespoons toasted sesame seeds
- 1 pound asparagus thin
- 3 green onions white bulb + 3" green cut 2" julienne
- 1 cucumber small, halved, seeded cut into 1/4" dice
- Cook linguine until tender. Rise in cold water.
- Process in food processor for 1min --> garlic, vinegar, brown sugar, peanut butter, & soy sauce.
- With the motor running, slowly add the sesame & hot chili oil. Process until well blended.
- Shred the chicken into 2" julienne & toss with the linguine. Add the sauce & 4 Tbls . of sesame seeds. Toss to coat well.
- Cut the asparagus on the diagonal into 1' lengths. Branch in saucepan of boiling water for 1min. Rinse under cold water.
- Place the linguine & chicken in a large flat serving bowl & arrange the asparagus on top. Sprinkle with scallions, cucumber, and the remaining 1 Tbl . sesame seeds. Serve at room temp.
