Very Berry Sugar-Free Muffins

  1. First, grind the oat and coconut with an electric grinder until you make them into flour.
  2. In other recipient, combine the wet ingredients: applesauce (you cand find how to make it in a quick and easy way on my gallery) + honey + skim milk + liquid stevia (or vanilla extract) + egg whites (previously beaten). Mix well with a hand or electric mixer.
  3. Now, carefully mix the wet and dry ingredients and stir until you get a smooth and homogeneous mixture. Add some berries and combine.
  4. Finally, pour the mixture in a silicon (or greased) muffin pan and put in the oven (preheated) to 170u0b0 for 20-15 minutes. Cover the pan with a baking or aluminium sheet to prevent burning the top of the muffins. Once you can poke a stick and it comes out clean, you can remove from the oven and let them cool off.
