Very Berry Sugar-Free Muffins
- 1 + 3/4 cups oat flour (if you have flakes, you can grind them)
- 1/2 cup coconut flour (just grind or use shredded coconut)
- 1/2 cup applesauce (unsweetened)
- 3 egg whites
- 1/2 cup skim milk (almond, soy milk...)
- 3 cups honey (or agave syrup/similar)
- 3/4 baking powder
- 1/2 teaspoon cinnamon
- 1 cup frozen berries (Lidl)
- stevia and/or vainilla extract to taste (I used 1 teaspoon granulated stevia + 3 drops liquid vanilla stevia)
- In a mixing bowl, pour this flour and add the other dry ingredients: baking powder + cinnamon + granulated stevia. Set aside.
- First, grind the oat and coconut with an electric grinder until you make them into flour.
- In other recipient, combine the wet ingredients: applesauce (you cand find how to make it in a quick and easy way on my gallery) + honey + skim milk + liquid stevia (or vanilla extract) + egg whites (previously beaten). Mix well with a hand or electric mixer.
- Now, carefully mix the wet and dry ingredients and stir until you get a smooth and homogeneous mixture. Add some berries and combine.
- Finally, pour the mixture in a silicon (or greased) muffin pan and put in the oven (preheated) to 170u0b0 for 20-15 minutes. Cover the pan with a baking or aluminium sheet to prevent burning the top of the muffins. Once you can poke a stick and it comes out clean, you can remove from the oven and let them cool off.
