Nigella´S Chocolate Cupcakes
- 9/16 cup butter softened
- 5/8 cup sugar
- 1 cup flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 2 eggs
- 2 teaspoons vanilla extract
- 5 tablespoons milk
- 2 tablespoons cocoa powder
- 7/8 cup light cream cheese
- 1 cup powdered sugar
- ground cinnamon
- Preheat the oven to 180 degrees Celsius.
- In a food processor, add the butter, sugar, flour, baking soda, baking powder, eggs, vanilla, and 2 tablespoons of cocoa powder and blend until smooth.
- Add 3 tablespoons of milk and mix until completely blended.
- Fill two greased cupcake pans 3/4 full with the batter.
- Bake for 30 minutes.
- Remove from the oven and allow to cool on a cooling rack.
- In a bowl, beat the cheese with the powdered sugar and remaining milk. Mix well.
- Using an icing bag with a star nozzle, decorate the tops of each cupcake.
- Finally, sprinkle with cinnamon or cocoa powder.
