Breakfast Bread
- 1 1/2 c. corn flakes
- 2 c. all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. margarine or butter
- 1/3 c. sugar
- 2 eggs
- 2 tsp. orange peel
- 1 c. orange juice
- 1/2 c. finely chopped nuts
- 1/2 c. seedless raisins
- Measure corn flakes.
- Crush to 3/4 cup.
- Stir in flour, baking powder and salt.
- Set aside.
- Measure margarine and sugar into large mixing bowl.
- Beat until light and fluffy.
- Add eggs and orange peel.
- Beat well.
- Stir in orange juice.
- Add dry ingredients, mixing only until combined.
- Stir in nuts and raisins.
- Spread in well-greased 9 x 5 x 3-inch loaf pan.
- Bake in oven at 350u0b0 for about 50 minutes or until wooden pick inserted near center comes out clean.
- Cool about 10 minutes before removing from pan.
- Cool completely before slicing.
- Yield:
- 1 loaf.
