Spiced Toasted Cashew, Sweet Potato & Carrot Soup
- 1/2 garlic clove finely chopped
- 1/4 onion finely chopped
- 1/2 bell pepper finely chopped
- 2 sweet potatoes peeled and sliced
- 1 handful baby carrots peeled and sliced
- 1 pinch salt & pepper
- 1 handful cashew nuts
- 3 drops sauce cajun
- After finely chopping the onion, garlic and pepper, add all three to an oiled pan and lightly brown
- Add the chopped sweet potato and carrots to the pan and stir with the onions, peppers and garlic for 3-5 minutes
- Fill the pan with water to cover the veg & add the cajun sauce.
- Bring to the boil and simmer for 20-25 minutes until the potato and carrots are softened. When only a few minutes remain, add the cashews into a seperate pan and toast them until they are lightly browned on the outside. This should take only a few minutes.
- Add the contents of the pan along with the cashews to a blender and blend until smooth.
- Serve immediately.
