Spiced Toasted Cashew, Sweet Potato & Carrot Soup

  1. After finely chopping the onion, garlic and pepper, add all three to an oiled pan and lightly brown
  2. Add the chopped sweet potato and carrots to the pan and stir with the onions, peppers and garlic for 3-5 minutes
  3. Fill the pan with water to cover the veg & add the cajun sauce.
  4. Bring to the boil and simmer for 20-25 minutes until the potato and carrots are softened. When only a few minutes remain, add the cashews into a seperate pan and toast them until they are lightly browned on the outside. This should take only a few minutes.
  5. Add the contents of the pan along with the cashews to a blender and blend until smooth.
  6. Serve immediately.
