Mango Macadamia Cheesecake
- 1 ounce graham crackers crushed
- 1 ounce macadamia nuts ground, plus extra, toasted, to serve
- 1 teaspoon ground cinnamon
- 1/3 cup butter melted
- 3 cups cream cheese
- 3/4 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 14 ounces mangoes can sliced, drained, 1/2 chopped
- 1/4 cup all purpose flour
- whipped cream to serve
- Preheat oven to 350u0b0F. Line the base of a 9 inch diameter springform pan with foil.
- Combine graham cracker crumbs, macadamia nuts and and cinnamon in a bowl. Blend in butter, mixing well. Press firmly into the base of prepared pan. Chill for 20 mins, or until firm.
- Beat cream cheese and sugar together until smooth. Add eggs one a time, beating well after each addition. Mix in vanilla.
- Fold chopped mangoes and flour into cream cheese mixture. Pour into crust. Bake for 45-50 mins. Allow to cool. Serve topped with whipped cream, toasted macadamias and remaining mango slices.
