Giant Blueberry Muffins(Fat-Free)
- 1 1/2 c. fresh blueberries
- 2 Tbsp. sugar
- 2 2/3 c. flour
- 3 heaping Tbsp. sugar
- 3 3/4 tsp. baking powder
- 1 tsp. salt
- Egg Beaters equivalent to 2 eggs
- 1 c. skim milk
- 1/2 c. applesauce
- 1 1/2 tsp. sugar
- Heat oven to 375u0b0.
- Toss blueberries with 2 tablespoons sugar. Set aside.
- Stir flour, sugar, baking powder and salt together. Combine Egg Beaters, skim milk and applesauce and add to dry ingredients.
- Stir only until ingredients are moistened.
- Gently stir blueberries into batter.
- Divide evenly into muffin pan sprayed lightly with nonstick spray coating.
- Sprinkle top of each muffin with 1/4 teaspoon of sugar.
- Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
- Let cool about 5 minutes in pan, then remove and cool.
- Yield:
- 6 giant muffins.
