Chocolate-Covered Cherries

  1. Pat cherries dry with paper towels; set aside.
  2. In a small mixing bowl, combine the sugar, butter, corn syrup and salt; mix well.
  3. Knead until smooth.
  4. Cover and refrigerate for 1 hour.
  5. Roll into 1/2 inch balls; flatten each into a 2 inch circle.
  6. Wrap each circle around a cherry and lightly roll in hands.
  7. Place cherries with stems up on waxed paper-lined baking sheets.
  8. Cover loosely and refrigerate for 1 hour.
  9. In a microwave or heavy saucepan, melt chocolate chips and shortening; stir until smooth.
  10. Holding onto the stem, dip each cherry into chocolate; set on waxed paper. Refrigerate until hardened.
  11. Store in a covered container. Refrigerate for 1 to 2 weeks before serving.
  12. Yield:
  13. 5 dozen.
