Xocai Healthy Brownies
- 1 1/2 cups spelt flour
- 1/2 cup sugar sugar substitute
- 3/4 cup cocoa
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 tablespoon salt
- 2/3 cup low-fat vanilla yogurt
- 2/3 cup nonfat milk
- 2 whole eggs
- 1/2 teaspoon vanilla extract
- 2 chunks dark chocolate Xocai Healthy Chocolate Nuggets, grated
- 2 chunks dark chocolate Xocai Healthy Chocolate Nuggets, chopped
- Heat oven to 400 degrees.
- Line muffin cups, or grease 8"x8" brownie pan.
- Stir together flour, sugar substitute, cocoa, baking powder, baking soda, and salt in medium bowl.
- Stir in yogurt, milk, eggs and vanilla just until combined.
- Add in grated "Xocai Nuggets" and "Xocai Nugget" pieces.
- Do not beat.
- Fill muffin cups 2/3 full with batter or pour all contents into pan.
- Bake 15 to 20 minutes or until wooden pick inserted in center comes out clean.
- Cool slightly in pan on wire rack.
- Serves 12
