Gourmet Chicken Pie

  1. Saute chicken and onion in butter in large skillet 5 minutes.
  2. Add the next 13 ingredients.
  3. Cover and simmer 10 minutes; then remove bay leaf.
  4. Combine cornstarch and water, blending well; stir into chicken mixture and cook over medium heat, stirring constantly, until mixture comes to a boil.
  5. Remove from heat and stir in soup, sour cream, and 3 cheeses.
  6. Roll half of pastry to 1/8 inch thickness and fit into a 2 1/2 quart shallow casserole dish.
