Beef-Vegetable Stir-Fry Over Rice
- 1 lb. boneless beef sirloin or top round steak (3/4-inch thick)
- 1 Tbsp. cornstarch
- 1 pouch dry onion soup mix
- 1 c. water
- 4 c. fresh vegetables, cut up (broccoli, mushrooms and carrots)
- 1/2 tsp. garlic powder
- 2 cloves garlic, minced
- 1/2 tsp. ground ginger
- Slice beef across grain into thin strips.
- Combine soup mix, cornstarch and water.
- In skillet over medium-high heat in 1 tablespoon hot oil, stir-fry half of the beef until browned. Remove; set aside.
- Repeat with remaining beef.
- Over medium heat in 1 tablespoon hot oil, stir-fry vegetables with garlic powder and ginger until tender-crisp.
- Add reserved soup mixture.
- Cook until mixture boils and thickens, stirring occasionally.
- Serve over Oniony Rice.
- Serves 4.
