Chicken Tagine With Couscous
- 2 tablespoons olive oil
- 8 chicken drumsticks
- 2 onions sliced
- 4 cloves garlic coarsely chopped
- 1 tablespoon spice ras el hanout
- 2 cups chicken stock
- 14 ounces diced tomatoes
- 1 pound potatoes peeled and chopped
- 4 ounces green beans trimmed and halved
- 1/2 cup pitted dates halved
- 1/4 cup pitted green olives sliced
- 1/4 cup cilantro leaves
- couscous to serve
- Preheat the oven to 300u0b0F.
- Heat oil in a large oven-proof skillet on high heat. Brown chicken on all sides. Transfer to a plate. Add onion and garlic to skillet and saute 3-4 mins, until tender. Add ras el hanout and cook, stirring, 1-2 mins, until fragrant. Stir in stock, tomatoes and potatoes. Bring to a boil. Return chicken to skillet. Cover.
- Bake 1 hour. Add green beans, dates and olives. Cover and bake 15 mins longer. Stir in cilantro. Serve with couscous.
