Pork And Peanut Ragu

  1. Chop peanuts until pretty fine with some larger bits; set aside. Heat oil in medium saute pan or skillet over medium heat. Add in shallot and garlic and cook without browning for 2 minutes, stirring occasionally. Add in pork and cook until lighly brown. Stir in all other ingredients, aside from peanuts and cilantro, along with 1/2 cup water. Simmer, uncovered, over medium heat for 4-5 minutes or until becomes thickened. Stir in peanuts.
