Warm ChèVre Salad With Crispy Lardons And Honeyed Walnuts
- 4 large handfuls of leafy greens
- 8 rashers of bacon, cut into lardons
- 1 punnet of cherry tomatoes, cut length-ways
- 1 large handful of walnuts
- 1 baguette
- 150g of Meredith Dairy plain chevre
- Drizzle of honey
- Olive oil
- Simple French Dressing - (Olive oil, Balsamic Vinegar, Dijon Mustard, Honey, Lemon)
- Preheat oven to 180 degrees celcius, fan forced
- Cut baguette into 12-16 silces and put on oven tray
- .Generously coat baguette slices in Meredith Dairy plain chevre and drizzle with olive oil
- Cut bacon into lardons
- Place baguette and goats cheese slices into oven until toasted and brown
- Light crush walnuts (optional) and drizzle with honey
- Place walnuts in oven
- Meanwhile fry up lardon pieces until crispy
- Assemble salad ingredients on a plate and top with goats cheese slices, walnuts and french dressing.
