Brenda'S Spinach Artichoke Baked Omelet

  1. In non-stick frying pan, saute garlic in olive oil for a minute or two. Add chopped tomatoes & saute about 1 minute. Remove from heat.
  2. Add remaining ingredients except parmesan cheese & stir Pour into glass baking dish sprayed with Pam. Bake in hot oven (425) until set and pulls away from sides of pan, about 30 - 40 minutes. Add parmesan cheese and return to oven until melted.
  3. Can be frozen.
