Red Fruit Terrine With Schweppes

  1. Put the gelatin in cold water for 8 to 10 minutes.
  2. Rinse and pat dry the strawberries, remove the stalks and cut into pieces. If raspberries and blackberries are too large, cut in 2.
  3. In a saucepan pour the cranberry juice, syrup, and Schweppes.
  4. Boil and add the softened gelatin and a few drops of food coloring.
  5. Mix well to dissolve gelatin. Set aside.
  6. Place the fruit in a soft cake mold, or else line a loaf pan with plastic wrap (so it sticks to the wall I recommend buttering it slightly).
  7. When the juice mix has cooled, pour it over the fruit.
  8. Refrigerate for a minimum of 6 hours, or overnight.
  9. Serve well chilled.
