Smoked Apple Sausage Skewers With Roasted Vegetables And Celery Root Slaw
- 3 pounds ground pork lean
- 12 ounces pork fat
- 1 tablespoon black pepper
- 2 1/2 tablespoons kosher salt
- 1 1/2 apple each, small dice
- 1 white onion small dice
- 2 tablespoons caraway seed
- 3 celery root wash, peel, fine julienne
- 2 apples peel, fine julienne
- 2 tablespoons Italian parsley chopped
- kosher salt as needed
- black pepper as needed
- 2 eggs
- 2 egg yolks
- lemon juice as needed
- 3/4 cup canola oil
- 1 1/4 cups pork fat rendered
- kosher salt as needed
- black pepper as needed
- garlic as needed
- lemon juice as needed
- 1/4 cup dijon style mustard
- 3. Smoke sausage for 45 minutes at 275 degrees F
- 1. Combine celery root through parsley and season with salt and pepper to taste
- 2. To make aioli by mixing eggs, yolks and citrus in a bowl of a robot coupe, spin for 30 seconds
- 3. Start emulsion by drizzling in oil and then pork fat
- 4. Season with more lemon if necessary, Dijon, salt, pepper and garlic
- 5. Dress celery slaw mix with aioli
