All-American Baked Beans From The New Basics

  1. Rinse and pick through beans.
  2. Soak overnight.
  3. Rinse soaked beans under cold water and place in heavy saucepan.
  4. Cover with water and bring to boil.
  5. Reduce heat and simmer until tender, 45 minutes to 1 hour.
  6. Drain, reserving cooking liquid.
  7. Preheat oven to 300u0b0.
  8. In a Dutch oven over medium heat, saute bacon until slightly crisp and fat is rendered, 5 minutes.
  9. Add the onions and garlic and cook over medium-low heat until dissolved, 5 minutes. Then stir in ketchup, syrup, molasses, Worcestershire, salt and pepper.
  10. Add drained beans; mix well.
  11. Cover and bake 2 1/2 hours; stir occasionally.
  12. Add 3/4 cup reserved bean liquid; cover and bake 30 minutes.
  13. Remove cover and bake 10 to 15 minutes until sauce is thick and syrupy.
  14. Stir once.
