Kale Ann
- 1 onion, diced
- 2 Tbsp. butter
- 2 lb. ground lamb
- 1 (12 oz.) can tomato paste
- 1 (12 oz.) can tomato sauce
- 2 pkg. chopped spinach, defrosted and squeezed dry
- 1 (16 oz.) small curd cottage cheese
- 1 (16 oz.) Mozzarella cheese
- 2 Tbsp. cinnamon
- 2 Tbsp. each: oregano, basil and parsley
- In a large frypan, add butter and onions.
- Cook until translucent.
- Add lamb and fry until done.
- Add tomato paste and sauce, oregano, basil, parsley and the cinnamon.
- Stir together and simmer.
- Mix the spinach and cottage cheese together.
- In a good size casserole, put the tomato-lamb mixture on the bottom; put half of the Mozzarella on top.
- Layer spinach-cheese mixture on top, then the rest of the Mozzarella.
- Bake at 350u0b0 for about 45 minutes until bubbly and the cheese is melted.
- Serve with spinach noodles and garlic bread.
