Pumpkin, Tuna, And Smoked Scamorza Cheese Muffins
- 1 1/4 cups all purpose flour
- 1 teaspoon baking powder
- salt
- 1 medium egg
- 1/8 teaspoon milk
- 3 11/16 tablespoons extra-virgin olive oil
- 1 can tuna packed in oil
- 5/8 cup pumpkin steamed
- 3/4 cup cheese smoked scamorza
- 2 tablespoons butter
- Preheat the oven to 180C.
- Puree the pumpkin and add a knob of melted butter.
- Cut the scamorza cheese into small cubes and break up the tuna.
- Combine the flour, baking powder, and a pinch of salt in one bowl, and, in another bowl, combine the egg, the milk, and the oil.
- Pour the liquid ingredients onto the dry ingredients and stir quickly to combine.
- Add the tuna, the cheese and the pumpkin and mix briefly.
- Fill muffin liners to 3/4 full and bake for approximately 25 minutes.
