Pumpkin, Tuna, And Smoked Scamorza Cheese Muffins

  1. Preheat the oven to 180C.
  2. Puree the pumpkin and add a knob of melted butter.
  3. Cut the scamorza cheese into small cubes and break up the tuna.
  4. Combine the flour, baking powder, and a pinch of salt in one bowl, and, in another bowl, combine the egg, the milk, and the oil.
  5. Pour the liquid ingredients onto the dry ingredients and stir quickly to combine.
  6. Add the tuna, the cheese and the pumpkin and mix briefly.
  7. Fill muffin liners to 3/4 full and bake for approximately 25 minutes.
