Crockpot Chicken Parmesan
- 1 pound boneless skinless chicken breasts
- 1/3 cup dressing light creamy
- 1/3 cup bread crumbs whole wheat or panko
- 1/3 cup Parmesan cheese grated
- 1 teaspoon italian seasoning
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 1/2 cup mozzarella cheese low-fat
- 8 ounces whole grain pasta
- 28 ounces pasta sauce
- Pour a tablespoon of olive oil in the bottom of your crockpot (or spray with nonstick spray).
- In one shallow bowl, pour the creamy dressing. In another, mix breadcrumbs with parmesan, Italian seasoning, garlic powder, salt and pepper.
- Dip each chicken breast in dressing and coat each side. Repeat with bread crumb mixture.
- Place chicken in the bottom of the crockpot, without overlapping if possible. Top with mozzarella cheese.
- Pour the jar of sauce over the chicken.
- Cover and cook on low for 6-7 hours or on high 3-4 hours.
- About 20 minutes before you are ready to eat, boil your pasta.
- Serve parmesan chicken and marinara over pasta. Top with additional cheese, if you'd like!
