Irish Brown Bread
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 tablespoons butter
- 2 cups whole wheat flour
- 1/4 cup quick cooking oatmeal
- 1 1/2 cups non fat yogurt
- milk only if needed
- 1 pinch oatmeal for decoration
- preheat oven to 190 degrees C
- Lightly grease baking sheet
- Mix all-purpose flour, sugar, baking powder, baking soda and salt in a bowl.
- Cut butter into flour with a pastry blender or two knives (when you are using knives cut in opposite directions simultaneously) until mixture forms fine crumbs.
- Stir in quick-cooking oatmeal and whole wheat flour.
- Add in the yogurt and stir. If the mixture is too dry add in some water but remember it should not be sticky.
- Turn out the dough onto a floured surface and gently kneed into a ball.
- Place on to baking sheet and cut an X in the top. Remember to mak it deep so that the insides cook but be careful not to go all the way through. nn(optional) sprinkle some oatmeal over the top for decoration.
- Bake for about 40 mins until well browned. Transfer to rack to cool. You may eat the bread hot or cold.
