Walnuts Pie Flavor Soft Cookies (Vegan)

  1. First, preheat oven in 180u0b0C or 350u0b0F.
  2. Place in a small bowl, the chia seeds and water. Stir a litle with a spoon and put the mix in fridge for 15 min.
  3. While the chia egg is in the fridge, continue the rest of the recipe.
  4. Place rolled oats in a blender or food processor. Blend, or process, on high until oats resemble a fine powder.
  5. Put the oats flour in a medium bowl. And place the walnuts in a blender or food processor. Blend, or process, on high until walnuts resemble sand.
  6. Put the walnuts in the bowl with oats floor. Add the whole wheat flour, baking soda, baking powder, cinnamon, salt, sugar and cocoa powder. Stir until the ingredients are mixed well.
  7. In the mix put, the applesauce and the chia egg. Mix with your hands or a spoon until all ingredients are mixed well. If the mix is dry use a small amount of almond or soy milk (one tsp at a time until the mix is smooth and not dry but a little sticky).
  8. Add in the mix, the blueberries and mix.
  9. In a pan place a piece of cooking paper. Use a spoon or an icecream scoop to scoop a medium size amounts for each cookie. Place each cookie about 2-2.5 inches one to another. The mix makes about 20 cookies,it depends on how big the scoops for each cookie are.
  10. Bake the cookies for 16-20 minutes until they crack.
