Seasoned White Beans
- 1 lb. white beans
- 1 medium onion, chopped
- 3 pods garlic
- 1/4 cooking oil
- 1 stalk celery, chopped
- 1/4 c. chopped green peppers
- 1 lb. salt pork
- salt to taste
- black pepper to taste
- 1/4 c. green onions, chopped
- 1/4 c. parsley, chopped
- Boil
- salt
- pork
- and set aside.
- Reserve some of water from pork
- to
- add
- to
- beans.
- Place beans in pot with water, about 2 to 3-inches above beans.
- Boil until beans get to be a little tender; remove beans from fire.
- Drain and rinse beans. Into empty pot, add cooking oil and saute onions, celery, bell peppertnd garlic;
- add cubed salt pork and smother a little while.
- To this,
- addteans
- and
- some
- of
- water from pork. Continue cooking
- and
- adding water until desired creaminess. Add
- onion tops
- and
- parsley.
- Should
- cook for half hour or more.
