Strawberry Limeade Cupcakes

- 1 box white cake mix Duncan Hines
- 1 cup flour
- 1 cup sugar
- 3 eggs
- 8 ounces sour cream
- 1/2 cup water
- 1/2 cup milk
- 1 lime
- 1/2 cup strawberries chopped
- syrup Lime
- 1 cup limeade thawed
- 3/4 cup sugar
- frosting
- 8 ounces cream cheese softened
- 3/4 cup sugar
- 16 ounces whipping cream
- 4 tablespoons strawberry preserves
- Preheat oven to 375 degrees. Line a muffin pan with 24 liners.
- In a large bowl beat all cupcake ingredients except strawberries for 2 minutes on medium speed. Gently fold in berries last. Pour 1/4 cup into each liner. Place into oven and turn oven to 350 degrees. Bake for 13-15 minutes until the tops spring back lightly.
- While cupcakes are baking make the lime syrup by putting limeade and sugar in a small saucepan. Cook over low heat until sugar is dissolved. Remove from heat to cool.
- When cupcakes are cool use a skewer to make holes on the top and spoon syrup over the tops allowing it to sink in.
- Frosting:
- Beat cream cheese and 3/4 sugar together until light and fluffy. Remove from bowl and place to the side. In the same bowl whip heavy cream to medium-stiff peaks. Add cream cheese mixture back in and gently mix until combined. Stir in 3-4 Tbl. of strawberry preserves.
- Swirl frosting onto cupcakes and top with a sliced strawberry for garnish.
