Grilled Ribeye With Chimichurri
- 2 pounds ribeye steaks
- 1 teaspoon sea salt
- 1/2 teaspoon fresh ground black pepper
- 1/4 cup parsley finely chopped
- 2 tablespoons oregano finely chopped
- 3 tablespoons cilantro finely chopped
- 2 teaspoons dried chili
- 3 tablespoons red wine vinegar
- 2 cloves garlic minced
- 1/2 cup olive oil
- salt
- fresh ground black pepper
- Season steaks with salt and pepper and let rest at room temperature 30-40 minutes.
- Combine all ingredients in medium bowl. This can be prepared 3 days ahead and stored in airtight container in refrigerator. Remove from refrigerator 1 hour before using.
- Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to High heat setting.
- Place steaks on preheated Grill and cook 4-5 minutes per side or until thermometer reads 130-135u0b0F for medium rare.
- Remove from grill and let rest 10 minutes before serving with Chimichurri.
