Jerk Pork With Mango Sauce
- 2 pounds pork knuckle thinly sliced and pounded
- 5 green onions
- 1 onions
- 1 orange juice
- 1 habanero
- 1 habanero
- 1/4 cup white vinegar
- 5 sprigs thyme
- 1 tablespoon brown sugar
- 2 teaspoons kosher salt
- 1/2 teaspoon black pepper ground
- 2 teaspoons allspice ground
- 1 teaspoon cinnamon ground
- 1 teaspoon nutmeg ground
- 1/4 cup soy sauce
- 2 cloves garlic
- 1 tablespoon ginger
- 1 mango cut into large chunks
- 1/4 cup brown sugar
- 1 teaspoon cayenne ground
- 1 teaspoon nutmeg ground
- 1/4 red onion
- 1 clove garlic
- 1/2 bunch cilantro
- 1. Combine all marinade ingredients in blender, mix until smooth
- 2. Add pork to marinade and refrigerate overnight
- 3. Accordion fold meat onto 2 (soaked) wooden skewers
- 4. Grill for 3-4 minutes each side
- 5. For Roast Mango Sauce, toss mango with brown sugar, cayenne, and nutmeg
- 6. Cook for 10 minutes at 450u0b0 Fahrenheit, until browned
- 7. Puree the roast mango with remaining ingredients in blender, add water to get desired consistency
