Honey Goat Cheese Bruschetta
- 1/2 cup heirloom tomatoes baby, chopped
- whole grain baguette
- 8 ounces fresh goat cheese
- 3 tablespoons honey
- 1 cup balsamic vinegar
- 10 basil leaves chiffonade
- 5 cloves garlic minced
- Preheat oven to 350u0b0
- In a small saucepan, drizzle two tspn of olive oil and lightly brown the garlic. Pour in the balsamic, 1 tbsp honey and 2 leaves of basil and place on medium high heat for 10 minutes until reduced by half
- Slice the baguette in angled slices, place on a glass pan and bake for 5 minutes or until lightly crisp
- In a small mixing bowl, combine goat cheese with 2 tbsp honey and 5 basil leaves and stir until a creamy consistency
- Spread the goat cheese on the whole grain baguette slices, top with the chopped baby heirloom tomatoes, garnish with basil chiffonade and drizzle with the balsamic reduction
