Shrimp And Sausage Jambalaya
- 1 lb. peeled shrimp
- 1/2 lb. smoked sausage
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. minced celery
- 1 clove garlic
- 1/2 c. tomato sauce
- 3/4 tsp. salt
- 2 1/2 c. water
- 3 Tbsp. oil
- 1 minced onion
- 1 Tbsp. minced bell pepper
- 1 bay leaf
- 1 sprig thyme
- 1 c. washed rice (uncooked)
- dash of cayenne or red pepper
- Cut sausage into 1/2-inch pieces.
- Salt shrimp; fry in hot oil quickly until brown.
- Set aside.
- Fry sausage until well browned; drain off fat.
- Put shrimp back in pot.
- Add minced vegetables and tomato sauce; heat until cooked down, stirring often.
- Add rice; fry until brown.
- Add water and spices.
- Cover; simmer for 20 to 30 minutes, stirring only once, until rice is tender.
