Stewed Pumpkin With Black Beans And Corn Chips
- 2 tablespoons olive oil
- 1 onion diced
- 3 garlic cloves minced
- 1/2 red pepper seeded and diced
- 4 1/16 cups pumpkin peeled and diced
- 1 teaspoon cumin powder
- 1 teaspoon pepper powder
- 1 can black beans rinsed and drained
- 7 1/8 tablespoons corn chips like Doritos
- coriander Chopped
- Heat a large and high frying pan with the olive oil.
- Add the onions, garlic, and red pepper. Cook for 2 to 3 minutes, or until the onions are translucent.
- Add the diced pumpkin, cumin, and pepper powder.
- Season with salt and pepper.
- Stir occasionally, until the pumpkin is slightly tender for 8 to 10 minutes.
- Add the black beans and corn chips, mix well.
- Lower the heat, sprinkle with grated cheese.
- Keep on heat until the cheese begins to melt.
- To serve, sprinkle with chopped coriander.
