Party Nachos With Black Beans And Corn Salad

  1. Prepare the toppings. Chiffonade (cut into long strips) the spinach. Cut the tomatoes into quarters or halves depending on their size. Dice the avocado and squeeze the juice of 1/2 a lime over it and gently stir together. Crumble 1 cup of the feta cheese and place it and all of the above ingredients into small bowls or onto plates. Fill a small bowl with salsa and another small bowl with whole olives for garnishing.
  2. Drop a small amount of Avocado oil in a non-stick pan. Crumble the ground beef into the pan and cook on medium heat until it is slightly browned.
  3. Add 1/2 cup of the fresh salsa and stir. I use the raw onion and garlic in the fresh salsa as an assist so I don't have to add them separately. It's a little time saver.
  4. Add 1 Tablespoon of Cholula or your favorite hot sauce and sprinkle with pepper and stir.
  5. Pre-heat the broiler of your oven on the high setting.
  6. Spread a layer of the No Salt Added Blue Corn Chips on an oven tray. The blue chips add some great color to the dish, as well as being a little healthier.
  7. Sprinkle the 2 cups of shredded cheese over the chips evenly and place the pan under the broiler of your oven.
  8. After the cheese is melted and bubbly, spread the ground beef mixture over the cheese covered chips and put them under the broiler for a couple of minutes more.
  9. Serve each person a plate of the chip, cheese and seasoned beef mixture and they can choose the toppings to finish their nachos.
  10. Serve the Black Beans and Corn Salad on the side.
