Quick Dinner: Avocado Prawn Risotto Recipe (Gluten And Lactose Free)

  1. Since this is a very fast recipe start with boiling your rice is salted water. nnNow for your creamy sauce in a blender or in a bowl ready for your hand mixer (the easier way) prepare all of your remaining ingredients apart prom your cheese, peas and rice water. Mix until smooth.
  2. When your rice is almost cooked scoop away a half cup of the hot water and add to your avocado mixture and continue to blend for an additional 30-60seconds. nnDrain your rice when ready and combine your avocado mixture with your rice and stir well. Combine your parmesan cheese (gluten free cheese), few sliced prawns and 1/2 can tinned peas and stir.
  3. Serve with prawns on top. nnEnjoy.
