Quick Dinner: Avocado Prawn Risotto Recipe (Gluten And Lactose Free)
- 1 avocado
- 1 garlic cloves large or 2 medium
- sea salt
- white pepper
- black pepper
- 1 lemon juice medium
- 1 tablespoon olive oil
- 6 fresh basil leaves - 10
- 1 handful spinach can be fresh or frozen - helps with taste, texture and to achieve a nice colour for the sauce
- 250 grams rice any type - round rice is more often used for risottos
- 1/2 cup hot water your, from your rice
- 1 handful Parmesan cheese or any lactose free cheese
- 1/2 can peas
- Since this is a very fast recipe start with boiling your rice is salted water. nnNow for your creamy sauce in a blender or in a bowl ready for your hand mixer (the easier way) prepare all of your remaining ingredients apart prom your cheese, peas and rice water. Mix until smooth.
- When your rice is almost cooked scoop away a half cup of the hot water and add to your avocado mixture and continue to blend for an additional 30-60seconds. nnDrain your rice when ready and combine your avocado mixture with your rice and stir well. Combine your parmesan cheese (gluten free cheese), few sliced prawns and 1/2 can tinned peas and stir.
- Serve with prawns on top. nnEnjoy.
