Blackberry Jalapeno Bbq St.Louis Spare Ribs
- 10 St. Louis cut spare ribs each, skinned
- 1 1/4 cups brown sugar
- 2/3 cup paprika
- 1/3 cup kosher salt
- 1/4 cup black pepper
- 1/3 cup garlic salt
- 1/3 cup onion salt
- 1/3 cup celery salt
- 1/3 cup cayenne pepper
- 1/3 cup cumin ground
- 1. Skin back of ribs & liberally season ribs on both sides with rib rub
- 2. In char coal grill, bank hot coals on both sides of the fire grate or to one side & heat to 250 degrees (for gas grills, preheat & then turn off any burners directly below where the food will go)
- 3. Place racks on grate bone side down & cover
- 4. After 2-3 hours remove ribs & brush with blackberry BBQ sauce
- 5. Place back in grill for approximately 1 1/2 hours or until tender
- 1. Remove from grill & brush again with bbq sauce & serve
