Single Serve Angel Food Cake

  1. Preheat oven to 350 degrees. I used my toaster oven. Get out two mini loaf pans and set aside. Do not grease the pans.
  2. In a small bowl, combine the ground oats, cornstarch and xanthan gum (if using). Set aside.
  3. In a large bowl, add the egg whites, cream of tartar, salt, vanilla extract, and almond extract. Best with a handheld or stand mixer on medium-high speed until stiff peaks form (3-5 minutes)
  4. Reduce speed to low and slowly add the stevia one tablespoon at a time.nold in the dry ingredients, one scoop at a time. Be very gentle, making sure not to deflate the egg whites. Do not overmix.
  5. Scoop the batter into the loaf pans and flatten the surface. Bake for 20-30 minutes, or until surface is golden brown.
  6. Cool cakes upside down. Once cool, use a knife to run around the edges and loosen. Turn upside down and tap the sides and top until cake pops out. Top with strawberries and whipped cream and devour!
